There is a crazy chia seed trend and I am trying to get to the bottom of it! Guess what? they are pretty fun to work with!
They are packed with fiber and omega-3s. The plant, Salvia Hispanica, is grown for its seeds and originated in South America. It was a staple food for the Mayans and Aztecs.
They have an amazing gelling action and are often used to thicken puddings. What makes my chocolate chia recipe different from the other chocolate puddings; it's a mousse with a kick! When you blend the seeds, the product has a smoother and silkier texture.

Spiced Chocolate Chia Mousse
1 1/2 cups unsweetened almond milk
1/4 cup chia seeds
1 tbsp. cocoa powder
¼ cup chocolate whey protein
7 packets Stevia
1 tsp. vanilla extract
½ tsp. cinnamon
pinch of cayenne, optional
1 Tbsp. mini chocolate chunks for garnish

Place ingredients, except for chocolate chunks, in a blender. Blend until smooth and divide mixture among 4 containers or dessert dishes. Refrigerate overnight. Serve garnished with chocolate chunks.
